Copycat Dunkin Donuts Power Breakfast Sandwich

I'm one of those people that preparedness makes all of the difference.  If I have easy snack and meal choices ready to go, then I can resist the call of the drive through.  I've been enjoying baked eggs for a while now, usually with sauteed peppers and onion, on top of a whole grain English muffin.  When Dunkin Donuts came out with their new Power Breakfast Sandwich I immediately thought, I can make that at home!

I started with the same base baked eggs recipe that I've been using.  I do normally use whole eggs, but for this version to keep it true to the Dunkin Donuts one, I just used the whites.  I sauteed diced bell pepper and onion until they were soft, then let them cool.  I chopped up some baby spinach, discarding the stems.  I had lots of eggs on hand, so I separated them myself, but you could definitely use the store bought egg whites.

I beat the egg whites, added a bit of salt and pepper, the veggies, and then poured them into a sprayed muffin top pan.  Baked at 350 degrees, they should cook through in 13 to 15 mins, just keep an eye on them.  If you don't have one of those pans, you can also do them in a rimmed baking sheet, and then cut them into squares.

While they were baking, I made the sausage rounds.  I've yet to find commercially prepared sausage rounds that are big enough to fit in a breakfast sandwich, so I make my own.  I buy sweet Italian turkey sausage, remove it from the casing and form each one into a patty.   Cook it in a skillet over medium heat until brown and completely cooked through. I let mine rest on a paper towel lined plate.

Their version has cheese on it.  Sometimes I put it on, sometimes I don't.  I think it's great either way.  You can either store them in the fridge or in the freezer.  I do a combination of both.  For the freezer ones, I bag up the completed sandwich.  To reheat, I wrap the sandwich loosely in a paper towel and then microwave it at 50% for about 1 minute 30 seconds, then at full power for an additional minute.  Your times my vary.

For the fridge ones, I just bag the egg and the sausage together, I tried doing it with the sandwich thin also, but they got soggy.  If I want cheese, I sprinkle it onto one of the sandwich thins and put it under the broiler for a minute or so while I'm heating up the egg and sausage in the microwave.  You could also toast the sandwich thins and let the residual heat from that melt the cheese.


Copycat Dunkin Donuts Power Breakfast Sandwich

ingredients:

  • 6 whole large eggs or the equivalent in egg whites
  • 1/4 cup diced bell pepper (I like red or orange)
  • 1/4 cup diced onion
  • 1/4 cup chopped baby spinach
  • 1/4 teaspoon salt
  • 1/2 teaspoon fresh cracked black pepper
  • 6 sweet Italian Turkey Sausage Links
  • 6 multigrain sandwich thins
  • 6 slices cheese, if desired, I like pepper jack

instructions:

  1. Heat oven to 350 degrees.  Beat eggs.  Saute onion and peppers over medium heat until soft.  Let cool for about 5 minutes.  Add vegetables, salt and pepper to eggs, and whisk well.
  2. Coat muffin top pan with nonstick cooking spray.   Pour eggs into pan, filling each cavity equally.  Carefully place into oven.  Cook for approximately 13 to 15 mins or until eggs are completely cooked through.
  3. While the eggs are cooking, remove sausage casings and form each one into a patty.  Cook in a large skillet over medium heat until golden brown and cooked through.   Set aside on paper towel lined plate.
  4. To assemble, place sandwich round bottom on serving plate, top with sausage, then egg. add a slice of cheese if desired, then top with the other half of the sandwich round.
  5. To freeze: Allow sausage patties and egg rounds to cool, assemble sandwich and place in a ziptop bag.  To reheat, remove from bag, wrap loosely in a paper towel and microwave at 50% power for about 90 seconds, then full power for about a minute.
